How do I create a database of customers’ emails within GDPR?

When I am working in Flowers by Nattrass the customer conversation will go something along the lines of:
‘Would you like me to send you a receipt and delivery confirmation by email?’ Customer agrees and so I then input the customer’s email address into the [email] field (seen in the video below).
‘Are you happy for us to keep in touch and let you know when we have fresh flowers in stock in case you’d like to order again in the future?’ I would estimate that 6 out of 10 customers agree with this. Increasing our database little by little.
